Sweet Potato Brownies (Gluten Free)

OMGosh! These brownie are better then, well you fill in the blanks, LOL! I'm just saying they are AMAZING! Rich, decadent and creamy, plus they are gluten free! They are perfect on there own but topped with a scoop of vanilla ice cream makes this dessert mind blowing.


Ingredients

1-1/2 Cup mashed roasted Sweet Potatoes

1/4 cup + 2 TB Cacao Powder or Cocoa Powder

3/4 cup unsweetened Almond Butter (smooth)

1/4 cup + 2 TB real Maple Syrup

1/2 cup Chocolate Chips

Pinch Salt


Instructions

Preheat oven to 350 degrees. Lightly oil and Line a 8x8 square pan with parchment paper. Set aside.


In a food processor blend all the ingredients except the chocolate chips.


Pour the batter into a bowl and fold in chocolate chips. Evenly spread the batter into the prepared baking dish.


Bake for 25-30 minutes until the center of the brownie is firm.


Remove from oven and cool completely before cutting. Serve warm topped with vanilla ice cream.

I made the Sweet Potato Brownies today. It did not bake for 30 minutes. I had to bake in 15 minutes increments, three times. It turned out perfect! I chose to microwave the potatoes instead of roast them. Since I bake sweet potatoes pies, it took around the same amount of minutes.

I am happy you enjoyed the recipe. Yeah, baking can be tricky and sometimes we have to make adjustments. I also am baking everything in a double door airfryer so that can make the difference. 😊

My brownies came out like a really smooth moose. It was delicious, just not a brownie. In a parfaigh with some whipped cream maybe. Followed recipe.
