Crispy and Delicious! These are a perfect low carb chicken strip for you and your family to enjoy! Serve with a side of ranch and veggies to complete the meal.
Ingredients
1 large Raw Chicken Breast cut into strips
1 large Egg
1-1/2 cups crushed Pork Rinds
1/4 cup Parmesan cheese grated (fresh or jarred)
1/4 cup Heavy Whipping Cream
1-2 tsp Rosa's Chicken Seasoning (or to taste)
Rosa's Chicken Seasoning
3 Tablespoon Salt
1/2 Tablespoon Paprika
1 tsp Black Pepper
1 tsp Onion Powder
1 tsp Dried Thyme
1 tsp Dried Parsley
1/2 tsp Garlic Powder
1/2 tsp Cheyanne Pepper
Seasoning Instructions
Mix all the seasoning ingredients in a small bowl until well combined. Use as needed. Store in an airtight container. This recipe can be double.
Chicken Instructions
Preheat oven to 375 degrees. Place a baking rack on a baking sheet, set aside.
Place the cut up chicken in a medium bowl and season with 1or 2 tsp Rosa's Chicken Seasoning. Mix into the bowl of chicken the beaten egg and the heavy whipping cream, coating completely.
In a separate bowl mix the parmesan cheese and pork rinds together. Pour the pork rind mixture into a paper or plastic bag and add a few at a time the chicken piece, shake to coat the chicken completely on all sides. Place the chicken strips onto the baking rack and repeat the process. Baked for 25-30 minutes or until cooked through and crispy.
Take the chicken out of the oven and season to taste with a little more of the Rosa’s Chicken Seasoning. Enjoy.
This recipe makes 8 nice size strips of chicken, depending on how large the chicken breast you use.
