2 Tablespoons Olive Oil
1 tsp Sugar
3/4 cup Warm Water
1 packet (2-1/4 teaspoons) active dry yeast

Instructions
Oil the bottom and sides of a 9 inch Tart Pan and place on a baking sheet.
In a small bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes, or until frothy.
In a large bowl, whisk together the gluten-free flour, baking powder, and salt.
Add the olive oil to the frothy yeast mixture, then pour the wet ingredients into the dry ingredients. Stir until it thickens for about 2 minutes.
Evenly pour the dough into the prepared pan, spreading some of the dough a bit higher up the sides of the pan.
Cover with parchment paper then a clean kitchen towel. Make sure the parchment paper is not touching the dough giving it room to rise some. Let sit for 30-40 minutes to rise.
Preheat the oven to 425°F (220°C). Bake for 20-25 minutes or until light brown and cooked through, then add the toppings.
Bake for another 5-10 minutes or until cheese is melted and toppings are heated through. Slice and serve hot.
Note: You can also use a Spring Form Pan for this recipe. A large cake pan could work as well if you don't have any of these special pans.
