Crispy Pumpkin Flax Crackers (Vegan & Budget-Friendly Snack)

Golden, crispy pumpkin flax crackers made with wholesome seeds—an easy, crunchy, budget-friendly vegan snack that pairs perfectly with dips or spreads.
Ingredients
1 cup Flax Seed Meal (I used organic golden but brown is fine)
1/2 cup Water
1/2 tsp Salt
1/4 cup Non-Fortified Nutritional Yeast
1/2 cup Raw Pumpkin Seeds
Parchment Paper
Pumpkin and flax might sound unusual together, but they make the most deliciously crisp and wholesome crackers. These crackers are light, crunchy, and packed with flavor, while also being full of fiber and healthy fats from the flax seeds.
I love serving them on a snack board with hummus or vegan cheese, or keeping them on hand for an afternoon snack. They’re affordable, easy to make, and such a unique way to enjoy pumpkin in a savory form.
Instructions
Preheat oven to 350 degrees.
In a large bowl mix all the ingredients together until well combined for about 1 minute until it forms a dough ball.
Place the dough onto one of the sheets of parchment paper and cover the dough with the second parchment paper. Using a rolling pin, roll the dough into a thin layer. Remove the top parchment paper and slide the flattened dough (still on the parchment paper) onto the a large baking sheet.
Bake for 15 minutes, remove from the oven, cut or break the crackers into the size you desire and flip the crackers over using a spatula, then place back into the oven to bake for another 10 minutes or until golden brown and crisp.
Remove from the oven, place the crackers on a cooling rack and allow to cool completely.
Store in a airtight container.
Note: this recipe can be cooked in a dehydrator for those who are on a raw vegan lifestyle. They still come out fantastic! Bake in the dehydrator for about 2-3 hours until crisp.
