Ingredients

2 tsp Olive Oil

8 ounces Frozen Shirataki Mushrooms (or cremini mushrooms, sliced)

3 Garlic Cloves, minced

2 (15-ounce) cans Lentils, drained

1 cup Unsweetened Soy Milk

2 Tablespoon Cornstarch

1/2 cup Veggie Broth

1/3 cup Grated Vegan Parmesan Cheese

2 cups Baby Spinach

Salt and Black Pepper, to taste

Fresh Parsley, for garnish (optional)

Instructions

Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5 to 6 minutes, stirring occasionally, until they're beautifully browned and most of their moisture has evaporated.


Add the minced garlic and cook for about 30 seconds, just until fragrant.


In a measuring cup, whisk together the soy milk and cornstarch until completely smooth.


Pour the soy milk mixture and the broth into the skillet along with the lentils. Stir well and bring everything to a gentle simmer.


Sprinkle in the vegan Parmesan and continue cooking for 2 to 3 minutes until the sauce thickens into a rich, creamy consistency; stirring on occasion.


Fold in the spinach and cook for another minute until just wilted.

Remove from the heat. Taste and season with salt and black pepper as needed.


Serve immediately with toasted sourdough and garnish with fresh parsley and extra vegan Parmesan if desired, or over hot rice or pasta.

If using cooked from dried lentils the equivalent for the lentils will be 3 cups cooked for this recipe.
