Apple Cinnamon Sourdough Loaf

This Apple Cinnamon Sourdough Loaf is soft, flavorful, and so easy to make — no rising time required! Packed with chunks of sweet apples and swirls of cinnamon, this quick sourdough bread is perfect for breakfast, a snack, or even dessert. The tangy flavor from the sourdough starter pairs beautifully with the warm spices and tender fruit. Ingredients

1 cup Sourdough Starter Discard

1-1/2 cups All-Purpose or Whole-Grain Flour

1/2 cup Brown Sugar, packed (or coconut sugar)

1/4 cup Warm Plant-Based Milk

1/4 cup Coconut Oil, melted (or Vegan Butter)

1 tsp Vanilla Extract

1 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Salt

1-1/2 tsp Ground Cinnamon

1/4 tsp Ground Nutmeg

1 cup Apple, finely diced (peeled and cored)

1/4 cup Chopped Walnuts or Raisins (optional)


Crumble Topping (optional)

1/3 cup All Purpose Flour

2 Tablespoons Brown Sugar

1/2 tsp Cinnamon

Pinch of Salt

2 Tablespoons Cold Vegan Butter, cubed


Optional Glaze: (optional)

1/2 cup Powdered Sugar

1–2 Tablespoons Plant Milk

1/2 tsp Vanilla



Instructions:

Preheat your oven to 350°F (175°C) and grease a standard loaf pan.


In a large bowl, mix the sourdough discard, plant-based milk, melted vegan butter, and vanilla extract.


In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.


Fold the dry ingredients into the wet mixture until just combined. Fold in the diced apples and optional nuts or raisins. (Optional to top with additional walnuts).


Pour the batter into the prepared loaf pan, This will be a thick dough batter. If using, top with the crumble topping.


Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.

Let the loaf cool in the pan for at least 10 minutes then remove from pan before slicing.



Note: Ovens vary so the baking time could take longer, maybe an additional 15 minutes to assure an even bake inside. Bake until a light golden brown and toothpick comes out clean.


Tip: Try making this loaf without the crumble topping and glaze to save time and reduce the sugar intake.
