A delicious delicacy, this Baked Salmon is tender buttery and full of flavor. We enjoy this fish with a side of wild rice and steamed broccoli.
Ingredients:
4 salmon fillets
Salt and pepper to taste
2 tbsp. olive oil
2 tbsp. butter
2 garlic cloves, minced
1/4 cup chicken broth
2 tbsp. lemon juice
1 tbsp. chopped parsley
Directions:
Preheat oven to 400°F.
Season salmon fillets with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Add salmon fillets to the skillet and cook for 2-3 minutes per side or until lightly browned.
Remove skillet from heat and transfer to the oven.
Bake for 8-10 minutes or until salmon is cooked through.
In another skillet, melt butter over medium heat.
Add minced garlic and cook for 1-2 minutes or until fragrant.
Add chicken broth and lemon juice to the skillet and bring to a boil.
Cook for 2-3 minutes or until sauce is slightly reduced.
Remove skillet from heat and stir in chopped parsley.
Serve baked salmon with lemon butter sauce drizzled over the top.
