Blueberry Oatmeal Bake

This wholesome Blueberry Oatmeal Bake is perfect for a healthy and satisfying breakfast. Packed with antioxidant-rich blueberries that support brain health and reduce inflammation, this baked oatmeal is both nourishing and delicious. Oats, loaded with heart-healthy soluble fiber, provide long-lasting energy and help regulate cholesterol levels. Naturally sweetened with maple syrup and vanilla, each bite delivers a comforting warmth, while plant-based milk adds essential nutrients like calcium and vitamin D.




Ingredients

2 cups Rolled Oats (Gluten Free can work as well)

1-1/2 cups Plant-Based Milk (almond, oat, or soy)

1/2 cup Unsweetened Applesauce (or mashed Banana)

1/3 cup Maple Syrup (or your preferred sweetener)

2 tsp Baking Powder

1 tsp Vanilla Extract

1 tsp Cinnamon

1/4 tsp Salt

1/2 cup Mixed Berries (blueberries, strawberries, or your choice)

2 Tbsp ground Flaxseeds (optional for extra fiber)

1 Tbsp Coconut Oil or non-stick spray (for greasing the pan)


Instructions

Preheat your oven to 350°F (175°C). Grease a medium size casserole dish or large loaf pan.


In a large bowl, combine the rolled oats, baking powder, cinnamon, salt, and ground flaxseed (if using).


In a separate bowl, mix the plant-based milk, applesauce, maple syrup, and vanilla extract.


Pour the wet mixture into the dry ingredients and stir until everything is combined.

Gently fold in the mixed berries.


Pour the batter into the prepared baking dish and spread it evenly.


Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out almost clean.


Let it cool for a few minutes then serve with additional maple syrup, fresh fruit, or a dollop of nut butter if desired.



Note: depending upon what size pan you use the baking time may vary.
