These overnight oats taste just like a slice of carrot cake but in a creamy, nourishing breakfast form. The oats soak up the sweet spices, shredded carrot, and a touch of maple syrup overnight for a delicious grab-and-go meal. I love topping mine with raisins and chopped walnuts for extra texture and flavor. It’s a wholesome way to start your morning with dessert-like satisfaction.
Ingredients
One Serving:
1/2 cup Rolled Oats
1/2 cup Plant Milk (or water) more if you like
2 Tablespoons Grated Carrot
1/4 tsp Ground Cinnamon
1 tsp Brown Sugar or White Sugar (or to taste)
Optional add-ins: chopped walnuts, raisins, or shredded coconut if you want it extra “carrot-cake” style.
OR
Four Servings:
2 cups Rolled Oats
2 to 3 cups Plant Milk (start with 2 for thicker oats, 3 for creamier)
8 Tablespoons (½ cup) Grated Carrot
1 tsp Ground Cinnamon
4 teaspoons Brown Sugar or White Sugar (or to taste)

Instructions
In a jar or container, combine rolled oats and grated carrot.
Sprinkle in cinnamon and sugar.
Pour in plant milk and stir well.
Cover and refrigerate overnight.
In the morning, give it a stir and enjoy cold, or heat it up for a warm breakfast.
Tip: These keep in the fridge for up to 4 days, so prep several jars at once for easy grab-and-go breakfasts.
