Ingredients
1/2 cup Small Pasta (or Broken Thin Spaghetti, Orzo, Alphabets etc.)
1/3 cup White Beans
1-2 Tablespoon Tomato Paste (or to taste)
1 Garlic Clove, grated
1 tsp Italian Seasoning
1 Tablespoon Nutritional Yeast
2 tsp Vegan Bouillon Paste (to taste)
Small Handful Spinach
2 Tablespoons Oat Milk or Unsweetened Plant Milk
2-1/2 Cups Water for cooking
32 oz. Wide Mouth Mason Jar
This soup has such a comforting homemade flavor while still being incredibly easy to prepare. The tomato paste creates a rich broth, the herbs make the kitchen smell amazing, and the white beans help turn this into a truly filling meal instead of just a light snack. I especially love making these jars ahead of time because they feel cozy and nourishing on busy days when I don’t feel like cooking a full dinner. It reminds me a little bit of creamy tomato soup and pasta combined together in the best possible way.
Instructions
Add tomato paste, garlic, Italian seasoning, nutritional yeast, and bouillon paste to the bottom of a jar.
Add the white beans and spinach.
Layer the pasta on top.
When ready to cook, pour boiling hot water into the jar until almost filled.
Put the lid on and allow to sit for about 5–6 minutes or until the pasta is tender.
Carefully open as the jar will be hot. Stir in the oat milk at the end for extra creaminess.
Taste and adjust seasoning if needed before serving.
