Creamy Tomato Herb Pocket Soup Jar

Creamy tomato herb pocket soup with pasta, white beans, spinach, and herbs in a warm rustic bowl.

This creamy tomato herb pocket soup feels like comfort food in the easiest possible form. Once the hot water is added, the tomato paste and seasonings transform into a rich savory broth while the pasta softens and the beans make the soup extra filling. The herbs and garlic give the whole jar such a warm homemade flavor that it honestly tastes like something you simmered on the stove. I love keeping a few of these prepped in the fridge because they make quick lunches feel cozy, nourishing, and comforting without much effort at all.

There’s something so cozy and satisfying about opening one of these creamy tomato herb soup jars after the flavors have had a few minutes to come together. The hot water transforms the tomato paste and herbs into a rich comforting broth while the pasta softens and absorbs all that delicious flavor. The white beans make this soup hearty enough to feel like a full meal, while the spinach adds freshness and color to every bite. This is the kind of easy lunch that feels homemade and comforting even on the busiest days.

Ingredients

1/2 cup Small Pasta (or Broken Thin Spaghetti, Orzo, Alphabets etc.)

1/3 cup White Beans

1-2 Tablespoon Tomato Paste (or to taste)

1 Garlic Clove, grated

1 tsp Italian Seasoning

1 Tablespoon Nutritional Yeast

2 tsp Vegan Bouillon Paste (to taste)

Small Handful Spinach

2 Tablespoons Oat Milk or Unsweetened Plant Milk

2-1/2 Cups Water for cooking

32 oz. Wide Mouth Mason Jar

This soup has such a comforting homemade flavor while still being incredibly easy to prepare. The tomato paste creates a rich broth, the herbs make the kitchen smell amazing, and the white beans help turn this into a truly filling meal instead of just a light snack. I especially love making these jars ahead of time because they feel cozy and nourishing on busy days when I don’t feel like cooking a full dinner. It reminds me a little bit of creamy tomato soup and pasta combined together in the best possible way.

Instructions

Add tomato paste, garlic, Italian seasoning, nutritional yeast, and bouillon paste to the bottom of a jar.

Add the white beans and spinach.

Layer the pasta on top.

When ready to cook, pour boiling hot water into the jar until almost filled.

Put the lid on and allow to sit for about 5–6 minutes or until the pasta is tender.

Carefully open as the jar will be hot. Stir in the oat milk at the end for extra creaminess.

Taste and adjust seasoning if needed before serving.

Tomato Herb: ~$1.50–1.75

NOTE: FOR YOUR SAFETY PLEASE ALLOW THE SOUP JAR TO COME TO ROOM TEMPERATURE BEFORE ADDING THE HOT WATER.
