This easy vegan peach cobbler is everything I love about comfort baking — warm fruit, buttery crumble, and a sweet golden top that melts into the peaches. You don’t need many ingredients to make it, and it always comes out soft, cozy, and full of flavor. It’s one of those recipes that tastes like someone’s grandmother made it, even though it comes together quickly. Perfect for holidays, gatherings, or just a simple treat at home.
Ingredients
Peach Filling:
2 cans (15 oz each) Peaches in juice, drained, (save about 1/2 cup juice)
1/3 cup Sugar
1 Tablespoon Cornstarch
1 tsp Cinnamon
1/2 tsp Vanilla Extract
Pinch of Salt
Cobbler Topping:
1 cup All-Purpose Flour
2 Tablespoons Sugar (you can go up to 3 if you like it sweeter)
1-1/2 tsp Baking Powder
1/4 tsp Salt
1/2 tsp Cinnamon (optional)
1/4 cup Cold Vegan Butter, cubed
1/3 cup Plant Milk (unsweetened works best)
1/2 tsp Vanilla Extract
Instructions
Preheat oven to 350°F (175°C). Lightly grease your baking dish, about a 3 quart size dish.
In a saucepan, combine drained peaches, 1/2 cup reserved juice, sugar, cornstarch, cinnamon, vanilla, and pinch of salt. Heat until bubbly and slightly thickened, then pour into baking dish.
In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
Add cold vegan butter and use a fork or pastry cutter until the mixture looks like coarse crumbs (some pea-sized bits are perfect).
Pour in plant milk and vanilla. Stir just until combined — don’t overmix; it should be thick and slightly sticky like biscuit dough, if it is not add a little more flour.
Spoon or drop the dough evenly over your fruit filling in rustic mounds (don’t spread smooth).
Bake at 375°F (190°C) for about 30–35 minutes, until golden and fluffy.
Note: If you’re using larger cans or fresh peaches, you’ll need about 3½ to 4 cups of sliced peaches total for this recipe.
Tip: If using fresh peaches, replace the ¼ cup canned juice with ¼ cup peach nectar, orange juice, or a mix of water and 1–2 teaspoons of sugar to create a light syrup flavor.
