This stovetop granola comes together in one pan in about 10 minutes and tastes so much better than store-bought. It’s crunchy, just the right amount of sweet, and loaded with fiber, healthy fats, and flavor from cinnamon and cardamom. I love making this in small batches to sprinkle over smoothie bowls or enjoy by the handful during the week.

How to make Easy Vegan Stovetop Granola
Ingredients
2 to 3 cups Rolled Oats (gluten-free if needed)
1/2 cup Agave or Maple Syrup (or Honey)
1–2 Tablespoons Vegan Butter or Coconut Oil
1/3 cup Chopped Walnuts
1/4 cup Pumpkin Seeds
1/2 tsp Ground Cinnamon
1/4 tsp Ground Cardamom
Pinch of Sea Salt
Instructions
In a large skillet over medium heat, add the oats and toast dry for about 3–4 minutes until slightly golden and fragrant.
Stir in the vegan butter, syrup, chopped walnuts, and pumpkin seeds. Toss well to coat.
Sprinkle in the cinnamon, cardamom, and salt. Continue stirring for another 4–5 minutes, allowing everything to lightly brown and stick together.
Spread the mixture on a parchment-lined baking sheet or a large plate. Let it cool and crisp up for at least 10 minutes.
Transfer to an airtight jar or container. Keeps well at room temp for up to 1 week.
