Grilled Peach & Pesto Pasta Salad (Vegan & Gluten Free)

Juicy grilled peaches, fresh basil pesto, and tender pasta come together in this sweet and smoky summer salad masterpiece.
Ingredients
8 oz Gluten Free Pasta (Penne or Fusilli)
2-3 Ripe Peaches, pitted and sliced
1 cup Cherry Tomatoes, halved
1/2 cup Arugula
1/4 cup Toasted Walnuts
Salt and Peppe to taste
This recipe was inspired by sweet summer peaches that practically begged to be grilled. When I paired them with homemade pesto and pasta, I knew I had something special — it’s sweet, smoky, herby, and completely unforgettable. I love making this salad for outdoor dinners; it feels fancy but comes together so easily.
Vegan Pesto
1 cup Fresh Basil Leaves
1/4 cup Walnuts or Pine Nuts
1/4 cup Olive Oil
2 Tablespoons Lemon Juice
1 Garlic Clove
1/4 tsp Salt
Instructions
Cook pasta, rinse with cold water, drain.
Grill peach slices on a hot pan or grill until charred marks appear, about 1-2 min each side.
Blend all pesto ingredients until smooth.
In a bowl, mix pasta, grilled peaches, cherry tomatoes, arugula, and walnuts.
Toss with pesto, serve warm or cold.
Note: This recipe can also be made with regular pasta, not gluten free.
