A protein-packed vegan breakfast burrito filled with seasoned tofu scramble, black beans, and fresh veggies. Perfect for fueling your morning!
Ingredients
For the Tofu Scramble
1 Block (14 oz) Extra-Firm Tofu, pressed and drained
1 Tablespoon Olive Oil
2 Tablespoons Nutritional yeast
1/2 tsp Turmeric
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Kala Namak (Black Salt) to taste for an eggy flavor
Salt and Pepper to taste
For the Black Beans
1 can (15 oz) Black Beans, drained and rinsed
1 tsp Olive Oil
1/2 tsp Cumin
1/4 tsp Smoked Paprika
Salt to taste
Additional Fillings (choose your faves)
Sliced Avocado or Guacamole
Sautéed Bell Peppers and Onions
Spinach or Kale
Vegan Cheese Shreds
Salsa or Hot Sauce
Roasted Sweet Potatoes
Hash Browns or Leftover Rice

For Wraps
3–4 Large Flour Tortillas or Gluten-Free Wraps
This is the kind of breakfast that fuels my day. Warm, hearty, protein-packed, and totally satisfying. I make a quick tofu scramble, toss in some seasoned black beans, and wrap it all up in a toasty tortilla.
It’s so easy to customize—sometimes I add sautéed peppers, sweet potatoes, or avocado depending on what I have on hand. These freeze beautifully too, so I love keeping a few prepped for busy mornings when I still want something nourishing and delicious.
Instructions
Heat olive oil in a pan over medium heat. Crumble in the tofu with your hands or a fork. Add nutritional yeast, turmeric, garlic powder, onion powder, salt, and pepper. Stir well and cook for 6–8 minutes until heated through and lightly golden.
In a separate pan, heat olive oil over medium heat. Add beans, cumin, smoked paprika, and a pinch of salt. Stir and cook for 3–5 minutes until fragrant and heated through. Lightly mash some of the beans for creaminess if you like.
While the tofu and beans cook, get your fillings ready—sauté veggies, slice avocado, or reheat sweet potatoes if using.
Warm your tortillas, then layer tofu scramble, beans, and your favorite toppings in the center of each one. Fold in the sides and roll tightly into a burrito.
Optional—pan-toast your burritos seam-side down for 2–3 minutes to crisp them up. Serve warm or wrap in foil to take on the go!
You can also use the Just Eggs brand egg substitute for the burrito.
