This cozy lentil and vegetable coconut curry is rich, creamy, and deeply satisfying, made with simple pantry ingredients like lentils, potatoes, carrots, and coconut milk for a nourishing and affordable one-pot vegan dinner.
Ingredients
1 Tablespoon Coconut Oil (or olive oil)
1 Medium Onion, chopped
3 Cloves Garlic, minced
1 Tablespoon Fresh Ginger, grated (or 1 tsp ground)
1-1/2 Tablespoons Curry Powder
1 tsp Ground Cumin
1/2 tsp Turmeric
1 cup Dried Lentils (red or brown), rinsed
1 cup Coconut Milk, unsweetened
3 cups Vegetable Broth
2 cups Mixed Vegetables (carrots, potatoes, cauliflower, frozen veg, or spinach)
Salt, to taste
This is one of those meals I turn to when I want something warm, comforting, and dependable. There’s something incredibly grounding about a pot of lentils slowly simmering with coconut milk, spices, and tender vegetables. The potatoes and carrots soften into the curry and absorb all that rich flavor, creating a bowl that feels hearty and complete on its own. I love recipes like this because they’re made from simple, affordable ingredients, yet they feel nourishing and satisfying in a way that lasts long after the meal is finished.
Instructions
Heat oil in a large pot over medium heat.
Add onion and sauté 5 minutes until soft.
Add garlic, ginger, curry powder, cumin, and turmeric. Stir until fragrant.
Add lentils, coconut milk, vegetable broth, and vegetables. Stir well.
Bring to a gentle boil, then reduce heat and simmer uncovered 25–30 minutes, stirring occasionally.
Cook until lentils are tender and curry is thick.
Season with salt to taste.
