Red Lentil and Sweet Potato Soup

This comforting, velvety soup is made with tender red lentils, sweet potatoes, and warming spices for a nourishing bowl that feels like a hug. It’s naturally creamy without any dairy, packed with fiber and plant-based protein, and comes together in under 30 minutes. Perfect for meal prep or a healing, feel-good dinner any night of the week.




Ingredients

1 Tablespoon Olive Oil

1 Onion, chopped

2 Garlic Cloves, minced

1 Large Sweet Potato, peeled and cubed

1 cup Red Lentils, rinsed

1 tsp Smoked Paprika

1/2 tsp Thyme or Ground Sage

4 cups Veggie Broth

Salt and Pepper to taste

Juice of 1/2 Lemon (optional)


Instructions

Heat oil in a large pot. Sauté onion and garlic until soft.


Add sweet potato, lentils, paprika, thyme, and broth. Bring to a boil.

Reduce heat and simmer 25–30 minutes until everything is soft.


Blend half the soup for a creamy texture, or leave it chunky.

Finish with lemon juice for brightness, if using.
