Scrumptious Strawberry Cereal

Crunchy, Fruity and oh so tasty! A perfect low carb treat. Get yourself a big bowl of milk for this cereal and bring out the kid in you! Oh, don't forget to share with your family. LOL


Ingredients


2 cups Almond Flour


2 tablespoons Psyllium Husk Powder


6 tablespoons Golden Flax Seed Meal


½ tsp Salt


1 tsp Baking Powder


1 tsp Berry Liquid Stevia or Liquid Monk Fruit Sweetener


¼ cup Butter melted


½ tsp Orange Extract


¼ cup Walden Farms Strawberry Syrup or Strawberry Syrup of choice


¼ cup Strawberry Puree


Instructions


Preheat the oven to 350 degrees. In a large bowl combine the almond flour, psyllium husk powder, flax seed meal, salt and baking powder whisking well removing all clumps.


In a small separate bowl whisk together the syrup, stevia, orange extract and strawberry puree then pour it and the butter into the almond flour mixture and stir to combine.


Take the dough and place the mixture onto a piece of parchment paper and cover it with another piece of parchment paper. Roll out the dough until you get the thickness of cereal you desire. Remove the top parchment paper.


With a pizza cutter slice to make squares out of the dough (or use the method that are in the recipe notes).


Slide the parchment paper with the cereal onto a baking sheet. Bake for 15 minutes, remove the pan from the over and turn the cereal over to crisp up the other side, separating each piece. Cook for 10 more minutes and repeat the process 5 minutes at a time until the cereal is cook through and crunchy. Remove cereal from the oven and allow cooling; store in an airtight container.


If you want to make your cereal into the round shape like in the picture, take a 1/2 tsp measure spoon and scoop out shapes. Then poke holes in the center of each shape. This process takes a bit longer but it will yield a great texture of cereal. You can sub out the Walden Farms syrup for your favorite sugar free syrup or sweetener; you just have to adjust the macros.


Notes:


You can sub out the Walden Farms Syrup for your favorite strawberry flavored sugar free syrup.


You can take a few strawberries and put them in a food processor and blend to make puree.


You can swap out liquid sweetener for granulated sweetener, but you will have to look up the equivalence to match the sweetness.
