Spanakopita


This low carb Keto friendly Spanakopita dish is amazing! Great for a gathering or any event. They can be make in advanced and heated later. Bonus, if you have any left over you can pack them in your lunch box for work the next day.


Ingredients


Filling


1/2 cup cooked Spinach (drained and chopped)


1 cup Fresh Mozzarella Cheese


2 ounces Goat Cheese


4 ounces Cream Cheese (room temperature)


1/4 tsp Salt


1/2 tsp Black Pepper


1/8 tsp Cayenne Powder


1/4 tsp dried Dill


1/8 tsp Garlic Powder


Dough


1 Fat Head Pizza Crust Recipe recipe on this website


1 large Egg beaten for egg wash


Instructions


Preheat the oven at 350 degrees and line a baking sheet with parchment paper.


Add to a large bowl the spinach, mozzarella cheese, goat cheese, cream cheese, salt, black pepper, cayenne pepper, dill and garlic powder and stir until combined, set aside.


Roll the Fat Head Crust into a square shape (about 1/4 inch thick) and cut into 4 pieces. Scoop even amounts of the filling onto each square of the dough. Fold the dough over the filling to cover completely, seal and crimp the dough around the filling. Brush tops and sides of the pastry with the egg wash.


Bake on 350 degrees for 20-25 minutes until golden brown. Remove from the oven and enjoy with your favorite marinara sauce.
