The Best Sweet Potato Brownies (Vegan + Gluten-Free!)


Ingredients

1-1/2 Cup mashed roasted Sweet Potatoes

1/4 cup + 2 TB Cacao Powder or Cocoa Powder

3/4 cup unsweetened Almond Butter (smooth)

1/4 cup + 2 TB real Maple Syrup

1/2 cup Chocolate Chips

Pinch Salt

These fudgy, rich brownies are my go-to treat when I want something chocolatey, satisfying, and a little more nourishing than your average dessert. Sweet potatoes not only add natural sweetness and moisture, but they’re also packed with vitamin A, fiber, and antioxidants — so your brownies come with a little bonus glow-up.

If you’re following a plant-based or gluten-free lifestyle, this recipe is perfect. It’s made with simple pantry ingredients, no refined flours, and zero dairy — just wholesome goodness in every bite.


These sweet potato gluten-free brownies are:

  • Vegan and dairy-free

  • Made without refined sugar (you can use coconut sugar or maple)

  • Naturally gluten-free (just be sure to use certified GF oats or flour)

  • Freezer-friendly and meal-prep approved


Want a richer texture? Stir in chopped walnuts or vegan chocolate chips before baking.Need it nut-free? Swap almond butter for sunflower seed butter.




Instructions

Preheat oven to 350 degrees. Lightly oil and Line a 8x8 square pan with parchment paper. Set aside.


In a food processor blend all the ingredients except the chocolate chips.


Pour the batter into a bowl and fold in chocolate chips. Evenly spread the batter into the prepared baking dish.


Bake for 25-30 minutes until the center of the brownie is firm.


Remove from oven and cool completely before cutting. Serve warm topped with vanilla ice cream.

I made the Sweet Potato Brownies today. It did not bake for 30 minutes. I had to bake in 15 minutes increments, three times. It turned out perfect! I chose to microwave the potatoes instead of roast them. Since I bake sweet potatoes pies, it took around the same amount of minutes.

My brownies came out like a really smooth moose. It was delicious, just not a brownie. In a parfaigh with some whipped cream maybe. Followed recipe.
