Tuna and White Bean Salad



Short on time? Whip this easy delicious Tuna and White Bean Salad up in a jiffy! Great for lunch served with whole grain cracker or eaten on its own. It's also a great portable dish you can have with at a picnic or take to lunch.


Ingredients:

2 cans of tuna, drained

1 can of white beans, drained and rinsed

1 tomato, diced

1/4 red onion, diced

1/4 cup chopped parsley

2 tbsp. lemon juice

2 tbsp. olive oil

Salt and pepper to taste


Directions:

In a large bowl, combine tuna, white beans, diced tomato, diced red onion, and chopped parsley.


In a separate small bowl, whisk together lemon juice, olive oil, salt, and pepper.


Pour the dressing over the tuna and bean mixture and toss to coat.

Serve chilled.
