Ingredients
1 fresh, young Thai coconut flesh (or any young coconut)
1/2 cup cashews 1/2 teaspoon vanilla seeds 1 teaspoon lemon juice
Enough coconut water to make your blender blade go around (not too much, as you don’t want a smoothie) Pinch of salt
Instructions
Combine all of the ingredients in your blender.
Blend until the mixture is smooth and creamy without any sandiness to it.
Serve with fruit or eat on its own.
