Ingredients
3 Tablespoons All-Purpose Flour
1/2 Tablespoon Sugar or Coconut Sugar
1/4 tsp Baking Powder
Pinch of Salt
2 Tablespoons Plant Milk
1 Tablespoon Peanut Butter
1/4 tsp Vanilla Extract (optional)
1/2 Tablespoon Oil OR 1 Extra tsp Plant Milk
Optional toppings: Sliced Banana, chocolate chips, extra Peanut Butter, or a pinch of Cinnamon
When that sweet craving hits and you want something fast, this vegan peanut butter mug cake is the answer! It’s rich, soft, and slightly gooey in the center, with just the right balance of nutty peanut butter and sweetness. The best part? It takes just minutes to make in the microwave — no oven required. Perfect for when you want a single-serving dessert without the mess or leftovers. It’s egg-free, dairy-free, and easy to customize with add-ins like chocolate chips, chopped nuts, or a drizzle of melted chocolate on top.
Instructions
In a microwave-safe mug, add flour, sugar, baking powder, and salt. Mix with a fork.
Stir in the plant milk, peanut butter, vanilla (if using), and oil. Mix well until smooth with no lumps.
Microwave on high for 60–75 seconds, until the top is set and slightly springy. (Avoid overcooking—it will firm up as it cools.)
Let it sit for 1 minute. Enjoy warm straight from the mug!
