This creamy broccoli soup is one of those quiet little comfort meals that makes you feel taken care of, even on the busiest or most overwhelming days, and the fact that it comes together in just 15 minutes makes it even more magical.
Ingredients
3 cups Fresh or Frozen Broccoli
1 cup Coconut Milk or Plant Based Milk (like soy, cashew or oat)
2 cups Vegetable Broth
1 Onion, chopped
2 Garlic Cloves, minced
Salt + Pepper to taste
1 tsp Onion Powder
1 Tablespoon Cornstarch
This 15-minute creamy broccoli soup is exactly the kind of food I lean on when I want something warm, nourishing, and deeply comforting without having to spend an hour in the kitchen. Broccoli has this amazing way of turning silky and rich when blended together with milk, almost like a cream-based soup, even though it’s completely dairy-free and light on the stomach.
I love making this when the weather is cool, when I’m tired, or when I just need something cozy that still feels fresh and clean. It’s simple, affordable, and honestly tastes like something you’d get in a cozy café, which is always my favorite kind of meal.
Instructions
Sauté onion and garlic in a pot.
Add broccoli, broth, and onion powder.
Cook 8–10 minutes.
Blend the soup until creamy.
Stir the cornstarch in the plant based milk, add to the
pot then warm through. Season with salt and pepper to taste and serve.
Note: add more vegetable broth for a thinner soup. Adjust to your preference.
