Ingredients

1 Tablespoon Olive Oil

1 Small Yellow Onion, diced

4 Garlic Cloves, minced

1/2 cup Diced Fire Roasted Tomatoes, from a can

2 tsp Italian Seasoning

1/4 tsp Crushed Red Pepper Flakes (optional)

2 (15-ounce) Cans Cannellini Beans, drained and rinsed

1 Cup Low-Sodium Vegetable Broth

1 cup Unsweetened Soy Milk

1/2 cup Grated Vegan Parmesan

2 cups Baby Spinach

Salt and Black Pepper, to taste

Fresh Basil or Parsley, for garnish (optional)

Few drops Liquid Smoke for a deeper robust flavor (optional)

Instructions

Heat the olive oil in a large skillet over medium heat.


Add the diced onion and cook for 4–5 minutes until softened and lightly golden.

Stir in the minced garlic and cook for about 30 seconds until fragrant.


Add the diced fire roasted tomatoes, Italian seasoning, and optional crushed red pepper flakes.


Cook for 1 minute, stirring frequently, allowing the tomatoes to soften and the herbs to bloom.


Stir in the cannellini beans and vegetable broth.

Bring to a gentle simmer.


Using the back of a wooden spoon or a potato masher, mash about one-third of the beans directly in the skillet. This naturally thickens the sauce without using flour or cornstarch.


Pour in the soy milk and stir well.

Add the vegan parmesan and cook for 2–3 minutes until melted and creamy.


Fold in the spinach and cook for 1–2 minutes until wilted.

Taste and season with salt and ground black pepper. Stir in a few drops of the liquid smoke, if using.
