Chickpea Cookie Dough

This edible Chickpea Cookie Dough is the perfect guilt-free treat when you're craving something sweet but want to keep it healthy! Made with wholesome ingredients like chickpeas, almond butter, and oat flour, it’s not only vegan and gluten-free but also packed with plant-based protein and fiber. The creamy texture combined with rich, melty chocolate chips makes it irresistible—and you can enjoy it raw without any worries! Whether you eat it by the spoonful or add it to your favorite desserts, this cookie dough is a delicious way to satisfy your sweet tooth while nourishing your body.





Ingredients

1 can (15 oz) Chickpeas, drained and rinsed

1/4 cup Almond Butter (or any nut/seed butter)

1/4 cup Pure Maple Syrup or Agave Nectar

1/4 cup Oat Flour (or Almond Flour)

1 tsp Vanilla Extract

1/4 tsp Salt

1/4 cup Dairy-Free Chocolate Chips

Optional: 1 Tbsp Plant-Based Milk (if the dough is too thick)


Instructions

In a food processor, add the chickpeas and blend until smooth. Scrape down the sides as needed to ensure all the chickpeas are well blended.


Add the almond butter, maple syrup, and vanilla extract. Blend again until creamy and smooth.


Add the oat flour and salt to the mixture. Blend until everything is well combined. If the dough seems too thick or dry, you can add a splash of plant-based milk to achieve your desired consistency.


Stir in the chocolate chips by hand.


Scoop the cookie dough into a bowl and enjoy it immediately, or store it in the fridge for a chilled version.




This cookie dough is safe to eat raw, packed with protein from the chickpeas, and has a deliciously rich flavor thanks to the almond butter and chocolate chips.
