This cozy Italian bean stew is rich, comforting, and exactly the kind of simple meal I find myself reheating night after night, especially when I want something warm and grounding without a lot of effort.
Ingredients
1 Tablespoon Olive Oil
1 Medium Onion, chopped
3 Cloves Garlic, minced
1 tsp Italian Seasoning
1/2 tsp Dried Oregano
1/2 tsp Paprika
1/4 tsp Red Pepper Flakes (optional)
2 cans White Beans (cannellini or navy), drained and rinsed
1 can Diced Tomatoes
2 cups Vegetable Broth
1 cup Water
Salt and Black Pepper, to taste
Optional add-ins:
1 cup Chopped Spinach or Kale
Splash of Balsamic Vinegar or Lemon Juice at the end
This is one of those recipes that quietly becomes part of your routine. I made this Italian bean stew on a whim, and before I knew it, I was reaching for it every night — reheating a bowl, dipping some bread, and feeling instantly calmer. It’s hearty without being heavy, deeply flavorful without being complicated, and made with ingredients I almost always have on hand. The longer it sits, the better it gets, which makes it perfect for busy weeks, slow evenings, or anytime you just want something cozy and reliable waiting for you in the fridge.
Instructions
Heat the olive oil in a pot over medium heat.
Add the chopped onion and cook for about 5 minutes, until soft and lightly golden.
Stir in the garlic, Italian seasoning, oregano, paprika, and red pepper flakes, letting the spices bloom for about 30 seconds.
Add the beans, diced tomatoes, vegetable broth, and water. Stir well.
Bring the stew to a gentle boil, then reduce heat and let it simmer uncovered for 20–25 minutes, stirring occasionally.
Lightly mash some of the beans with the back of a spoon to thicken the stew.
Stir in greens if using and cook for another 2–3 minutes, just until wilted.
Season with salt and black pepper to taste, and finish with a splash of balsamic vinegar or lemon juice if desired.
Serve warm with crusty bread, toast, or enjoy it just as it is.
