Crispy Smashed Potatoes

Indulge in these irresistible crispy smashed potatoes, where tender, fluffy interiors meet a perfectly golden, crunchy exterior. Each potato is seasoned with aromatic garlic, onion, and a hint of smoky paprika, creating a delightful flavor profile that will keep you coming back for more. These bite-sized gems are not only visually appealing, with their rustic charm and vibrant herb garnish, but they're also incredibly versatile—great as a side dish, a snack, or even a party appetizer. Drizzle with olive oil for added richness, and top with vegan cheese or nutritional yeast for a cheesy finish. These crispy smashed potatoes are sure to be a crowd-pleaser at any gathering!




Ingredients:

1.5 pounds Baby Potatoes (Yukon Gold or Red Potatoes work well)

3 Tablespoons Olive Oil

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Smoked Paprika (or regular paprika)

Salt and Pepper, to taste

Fresh Herbs (like parsley or chives), for garnish

Optional: Vegan Cheese or Nutritional Yeast for topping


Instructions

Preheat your oven to 450°F (232°C).


Place the baby potatoes in a large pot and cover them with water. Add a pinch of salt.

Bring to a boil and cook until the potatoes are tender and easily pierced with a fork, about 15-20 minutes.


Drain the potatoes and let them cool slightly.


On a baking sheet lined with parchment paper, arrange the potatoes in a single layer.

Use a fork or the bottom of a glass to gently smash each potato until it's about 1/2 inch thick.


In a small bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.


Drizzle the oil mixture over the smashed potatoes ensuring they are well-coated.


Bake in the preheated oven for about 20-25 minutes, or until the potatoes are golden brown and crispy on the edges.


For extra crispiness, flip the potatoes halfway through the baking time.


Once baked, remove the potatoes from the oven and garnish with fresh herbs and optional vegan cheese or nutritional yeast.


Serve warm as a delicious side dish or snack!
