Easy Lemon Vegan Scones on a Budget

Golden baked scones with lemon zest – easy vegan scone recipe under 25 cents each.

These homemade lemon vegan scones are golden, tender, and filled with the bright flavor of fresh lemon zest, making them the perfect budget-friendly treat to enjoy with your morning coffee or a cozy afternoon tea.








Ingredients

2 cups All-Purpose Flour

1/4 cup Sugar

2-1/2 tsp Baking Powder

1/2 tsp Salt

1/3 cup Cold Coconut Oil (solid) or Vegan Butter

2/3 cup Unsweetened Plant Milk (soy, almond, or oat)

1 Tablespoon Lemon Juice

1 Tablespoon Lemon Zest (about 1 lemon)

1 tsp Vanilla Extract


Optional glaze:

1/2 cup Powdered Sugar

2 tsp Lemon Juice

Splash of plant based milk as needed


Mix into smooth and drizzle on top of scone.




There’s something so cheerful about a lemon dessert, and these scones are no exception. They’re light, fluffy, and filled with the fresh zing of real lemon zest. I love baking a batch in the morning because the aroma fills the kitchen with sunshine.


They’re perfect for brunch, a mid-day snack, or an afternoon tea moment. Add the glaze if you want an extra touch of sweetness, but even plain, they’re a refreshing treat that feels special without breaking the budget.





Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or silicon mat.


In a large bowl, whisk flour, sugar, baking powder, and salt.


Cut in the coconut oil/vegan butter with a fork until crumbly.


In a small bowl, stir plant milk, lemon juice, zest, and vanilla.

Add to dry mix and gently fold until just combined (don’t overmix).


Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 wedges or round shapes.


Transfer to the baking sheet and bake 15–18 minutes, until lightly golden.


Cool slightly and drizzle with lemon glaze if desired.


Without glaze → $1.81 per batch (~$0.23 each)
