Easy Lemon Vegan Scones on a Budget

These homemade lemon vegan scones are golden, tender, and filled with the bright flavor of fresh lemon zest, making them the perfect budget-friendly treat to enjoy with your morning coffee or a cozy afternoon tea.
Ingredients
2 cups All-Purpose Flour
1/4 cup Sugar
2-1/2 tsp Baking Powder
1/2 tsp Salt
1/3 cup Cold Coconut Oil (solid) or Vegan Butter
2/3 cup Unsweetened Plant Milk (soy, almond, or oat)
1 Tablespoon Lemon Juice
1 Tablespoon Lemon Zest (about 1 lemon)
1 tsp Vanilla Extract
Optional glaze:
1/2 cup Powdered Sugar
2 tsp Lemon Juice
Splash of plant based milk as needed
Mix into smooth and drizzle on top of scone.

Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or silicon mat.
In a large bowl, whisk flour, sugar, baking powder, and salt.
Cut in the coconut oil/vegan butter with a fork until crumbly.
In a small bowl, stir plant milk, lemon juice, zest, and vanilla.
Add to dry mix and gently fold until just combined (don’t overmix).
Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 wedges or round shapes.
Transfer to the baking sheet and bake 15–18 minutes, until lightly golden.
Cool slightly and drizzle with lemon glaze if desired.
