Plus, tomatoes are packed with vitamin C and lycopene — making this delicious snack good for your body as well as your taste buds!
Ingredients
5–6 Roma Tomatoes, finely chopped
1/2 Red Onion, (or White Onion), finely chopped
1 Jalapeño (or Serrano Pepper), finely chopped (seeds removed for less heat)
1/4 cup Fresh Cilantro, chopped
Juice of 1 Lime
Salt to taste
Optional: 1 Garlic Clove, minced
This salsa is freshness in a bowl—juicy tomato, crunchy onion, zingy lime, and fresh cilantro pop with every bite. I make it often when tomatoes are at peak and serve it with tortilla chips
or spoon it over bowls and tacos. It’s bright, easy, and full of texture.
Instructions
In a medium bowl, combine the tomatoes, onion, pepper, cilantro, and garlic (if using).
Squeeze fresh lime juice over the mix and add salt to taste.
Stir well and let it sit for about 10 minutes to let the flavors meld.
Serve with tortilla chips, on tacos, or over rice bowls!
