Jicama, Apple & Cucumber Slaw

This light and crunchy slaw is the ultimate refreshing side for hot summer days. It combines crisp jicama, juicy apples, and hydrating cucumber with a zesty lime-maple vinaigrette that wakes up your taste buds. Jicama is packed with fiber and vitamin C, while cucumbers provide hydration and help support skin health. Apples add a natural sweetness and are rich in antioxidants that can support heart and gut health. Finished with red onion and optional cilantro, this slaw has a perfect balance of sweet, tangy, and savory. It’s great as a side dish, in tacos, or piled onto grain bowls for an easy, vibrant meal.
Ingredients
For the Slaw
1-1/2 cups Jicama, peeled and julienned or shredded
1 Apple (Granny Smith or Honey Crisp), julienned
1 Cucumber, thinly sliced or julienned (English cucumber works best)
1/2 Small Red Onion, very thinly sliced
1/4 cup Shredded Carrots (optional, for a pop of color and sweetness)
1/4 cup Fresh Cilantro, chopped (optional but lovely)
1 Tablespoon Sesame Seeds or Hemp Seeds (optional for a little crunch)
For the Dressing
2 Tablespoons Fresh Lime Juice (about 1 lime)
1 Tablespoon Apple Cider Vinegar or Rice Vinegar
1–2 tsp Maple Syrup or Agave (adjust to taste)
1 tsp Dijon Mustard
2 Tablespoons Olive Oil or Avocado Oil
1/4 tsp Sea Salt (or to taste)
Fresh Cracked Pepper to taste, optional
Pinch of Chili Flakes or 1/8 tsp Cayenne (optional for a little heat)
Instructions
Use a sharp knife to julienne or thinly slice the jicama, apple, cucumber, and red onion. Place them in a large mixing bowl.
In a small bowl or jar, whisk together lime juice, vinegar, maple syrup, Dijon, oil, salt, pepper, carrots and chili flakes (if using) until well combined.
Pour the dressing over the slaw and toss everything until coated evenly.
Let it sit for 10–15 minutes to allow the flavors to mingle, or serve immediately for ultra-crunchy texture.
Top with fresh cilantro and a sprinkle of sesame seeds or hemp seeds if you like a little extra texture.
Optional Add-Ins
Avocado slices (added just before serving)
Shredded purple cabbage for extra color and crunch
Fresh mint or basil if you're in a more tropical mood
Thinly sliced radish for a peppery pop
