Juicy Plant‑Based Burger (vegan, high‑protein)

Updated: Jun 21

Grilled vegan burger patty on a bun with lettuce, tomato, and sauce on a wooden board.

I created this burger recipe for my husband who have been transitioning into a plant based lifestyle. One of his favorite meals is hamburgers and french fries so I had to figure out something that was not only satisfying and delicious, but taste very close to real meat. These juicy plant based burgers are OMG AMAZING! They are bursting with flavor and the texture is spot on! My hubby didn't believe me when I said it was not meat, LOL!

How to make the Ultimate Plant Based Burger

Ingredients

For the Burger Patties:

1 cup Vital Wheat Gluten (Amazon Link Below)

1/4 cup Nutritional Yeast

2 Tablespoons Chickpea Flour (or any other flour you prefer)

1 Tablespoon Onion Powder

1 Tablespoon Garlic Powder

1 tsp Smoked Paprika

1 tsp Dried Oregano

1 tsp Dried Thyme or Italian Herbs

1/2 tsp Black Pepper

1 cup Water

2 Tablespoons Soy Sauce

2 Tablespoons Tomato Paste

1 Tablespoon Olive Oil

Salt to taste (you may not need it)

additional Oil for frying and basting

For assembling the burgers:

Burger Buns

Vegan Cheese (optional)

Lettuce leaves

Sliced Tomatoes

Sliced Onions

Pickles

Your favorite burger condiments

I created this burger for my hubby who was craving a classic burger experience—without the meat. These patties are chewy, smoky, and almost fooled him into thinking they were real.

They’re loaded with vital wheat gluten and bold spices, then cooked until they have that perfect crust. Serve them in a toasted vegan bun with all the fixings, and you’ve got an irresistible plant-based meal everyone loves. And hey, meat lovers included 😉

Instructions

In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, chickpea flour, onion powder, garlic powder, smoked paprika, oregano, thyme, black pepper, and salt.

In a separate bowl, whisk together the water, soy sauce, tomato paste, and olive oil.

Pour the wet ingredients into the dry ingredients and mix well until a dough forms. Knead the dough with your hands for about 1 minutes until it binds together a bit more. Divide the dough into 6 equal portions and shape each portion into about 1/4 inch thin burger patty.

Heat a non-stick skillet or grill pan over medium heat. Brush the skillet with a little oil to prevent sticking.

Place the burger patties on the skillet and cook for 5-6 minutes on each side, or until they are browned and cooked through. Flip the burgers over and brush each burger with additional oil and press the burgers with a spatular. If you are adding vegan cheese to your burger now is the time to top each burger with a slice of vegan cheese and cover with a lid until the cheese melts.

Assemble the burgers: Toast the burger buns if desired. Place a lettuce leaf on the bottom half of each bun, followed by a burger patty. Add sliced tomatoes, onions, pickles, and any other desired toppings. Spread your favorite burger condiments on the top half of the bun, then place it on top of the burger patty.

Serve your juicy and tasty plant-based burgers immediately.

Note: the meat portion of this burger would be considered low carbs so if you are living a keto or low carb lifestyle use low carb buns and condiments for this recipe.

I followed the recipe and the instructions. These were tough and truly inedible.

Sorry to hear that it they didn't come out for you. Maybe add a bit more water, sometimes using the gluten the measurements can be a bit off as it kinda compacts itself in the cup, resulting in more then 1 cup. I have a video on Youtube that may be helpful. Or if you'd like you can add a bit more water.
