Yummy juicy meatballs served on top of your favorite low carb pasta, what not to love! This is such a filling delicious dinner. A perfect comfort food for the fall and winter season.
Ingredients
1-1/2 pounds ground Sirloin Beef or ground beef (grass fed if possible)
1-1/2 pounds ground Pork (grass fed if possible)
3/4 cup grated Parmesan Cheese (grass fed if possible)
1/4 cup Cheddar Cheese (grass fed if possible)
1 tablespoon dry Parsley
1 tsp each dry Thyme, Garlic Powder, Cheyenne Pepper, and Black Pepper
2 large Eggs
Olive Oil to cook the meatballs
A jar of Low Carb Marinara Sauce
A package of Low Carb Pasta or Zoodles Zucchini Spirals
Instructions
In a large bowl mix all the meatball ingredients together only until combined, not over working the meat, it will make the meatballs tough. Form the meat mixture into 30 meatballs.
Add about 2 tablespoons of olive oil in a large frying pan and turn the burner on medium heat. Place the meatballs in the pan and sauté' turning each meatball to brown on all sides for about 30-35 minutes until fully cooked and no pink color inside. Add your favorite low carb marinara sauce into the pan and simmer on low until heated through. Remove from heat and enjoy.
You can serve on top of Zoodles (spiraled zucchini noodles) or a Low Carb pasta, Brown Rice Pasta. You can also serve as an appetizers by sticking a toothpick in each and arrange on a platter.
