Mango, Avocado & Cucumber Salad with Chili Lime Dressing

This tropical-inspired salad is a juicy, creamy, and refreshing mix of mango, avocado, and cucumber tossed in a tangy chili-lime dressing. Mango is rich in vitamin A and C, while avocado provides healthy fats that support brain and heart health. Cucumber adds crunch and helps you stay cool and hydrated. The touch of heat from chili powder or Tajín makes each bite pop with bold, exciting flavor. Fresh herbs like cilantro or mint give it a burst of garden freshness that ties everything together beautifully. Serve this on its own or with tortilla chips, wraps, or grilled dishes for a sunny, feel-good meal.




Ingredients

2 Large Ripe Mango, peeled and sliced into cubes

1 Cucumber, cubed or thinly sliced

1 Large Ripe Avocado, sliced

1/4 cup Red Onion, thinly sliced

2 Tablespoons Fresh Cilantro, chopped

1/2 cup Cherrie Tomatoes (optional)

Optional: 1 Small Jalapeño, thinly sliced for a kick



Chili Lime Dressing

Juice of 1 Large Lime

1 Tablespoon Maple Syrup or Agave

1 Tablespoon Olive Oil or Avocado Oil

1/2 tsp Spicy Chili Powder or Tajín

Pinch of Sea Salt, to taste


Gently toss mango, cucumber, red onion, and avocado in a bowl.

Whisk together the dressing ingredients.

Drizzle over the salad and top with fresh herbs and jalapeño if using.

Serve immediately and enjoy that tropical heat-meets-sweet flavor combo!


Note: This recipe can be doubles or tripled for a larger crowd.
