This Mediterranean White Bean Mason Jar Salad is fresh, colorful, and packed with plant-based protein from creamy cannellini beans and chickpeas. Tossed with a bright homemade lemon herb dressing, crisp vegetables, vegan feta, and olives, it's a delicious make-ahead lunch that's perfect for meal prep and busy weekdays.
Ingredients
Lemon Herb Dressing
1/4 Cup Olive Oil
3 Tablespoons Fresh Lemon Juice
1 Tablespoon Dijon Mustard
2 Garlic Cloves, minced
1 tsp Dried Oregano
1/2 tsp Salt
1/2 tsp Pepper
Salad
1 Can Cannellini Beans
1 can Chickpeas
1 English Cucumber, diced
1-1/2 Cups Cherry Tomatoes, halved
1/2 Red Onion, diced
4 Cups Baby Spinach
1/2 Cup Vegan Feta
14 Cup Chopped Parsley
1/4 Cup Chopped Kalamata Olives

Instructions
Whisk dressing ingredients.
Divide between four jars.
Layer:
Dressing (Bottom)
Cannellini beans
Chickpeas
Cucumbers
Tomatoes
Onion
Olives
Spinach
Vegan feta
Parsley (Top)
Place a small folded paper towel on top before closing to draw out any moisture while in the fridge. Store refrigerated up to 5 days.
Shake before eating.
