Mushroom Seitan Steak

Ingredients:

1 cup vital wheat gluten

1/4 cup nutritional yeast

1/4 cup chickpea flour (or other flour of choice)

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon dried thyme ( or Italian herbs)

1/2 teaspoon dried rosemary

1/4 teaspoon salt (to taste)

1/4 teaspoon black pepper

3/4 cup vegetable broth

2 tablespoons soy sauce or tamari

2 tablespoons tomato paste

1 tablespoon olive oil

1 packed cup finely chopped mushrooms (such as cremini or portobello)

2 tablespoons vegetable oil (for frying)


Instructions

In a large mixing bowl, combine vital wheat gluten, nutritional yeast, chickpea flour, onion powder, garlic powder, smoked paprika, thyme, rosemary, salt, and black pepper. Mix well to combine.


In another bowl, whisk together vegetable broth, soy sauce or tamari, tomato paste, and olive oil until well combined.


In a skillet, heat a tablespoon of vegetable oil over medium heat. Add the finely chopped mushrooms and sauté until they release their moisture and become golden brown, about 5-7 minutes. Remove from heat and let cool slightly.


Pour the wet ingredients and cooked mushrooms into the dry ingredients and mix with a spoon until a dough forms, then knead for about 1minutes with hands. Divide the dough into equal portions and shape them into steak-like patties, about 1/2 to 3/4 inch thick.


In a large skillet, heat the remaining tablespoon of vegetable oil over medium heat. Once hot, add the steaks to the skillet and cook for about 5-6 minutes on each side, or until they are golden brown and firm to the touch.


Once cooked, remove the steaks from the skillet and let them rest for a few minutes before serving. Serve with your favorite steak sauce, mashed potatoes, and vegetables.

This recipe is amazing! I couldn't find portobello mushrooms so I used baby bella, but the seitan steaks' flavor is just like meaty mushroom and steak seasoning. Mmmmmm so good! It makes me not miss eating steak any more. It made about 2 big steaks for me.

Hi!!! This is awesome! My husband is also moving to plant base due to heart attack. One question. Can I replace the oil for some vegetable broth?. Thank you so much for these wonderful vegan recipes!!!

I bet you could dry cook it in a skillet because the seitan mix was wet for me before cooking!
