Ingredients
1-1/2 cups Water
1 cup Quinoa (rinsed 3 x)
1/2 Tablespoon Chia Seed
1/2 tsp Salt
Instructions
In a bowl run water over the quinoa and wash with your hands, then drain. Do this three times.
Add the rinsed quinoa to a high speed blender along with the remaining ingredients and blend until you get a smooth crepe like batter.
Place a large frying pan onto the stove top on medium high heat. Using a ladle or large spooning add about 1/3 cup of the batter onto the pan. Quickly swirl the batter in a circular motion to get a large round thin pancake shape. Cook on each side for about 1 minute until lightly browned. Remove and repeat.
Separate the wraps with parchment or wax paper to prevent from sticking together.
Note: to make your quinoa wraps crispier and firm, reheat them in a dry hot pan until they crisp up.

Rosa's Nugget Wraps
Ingredients
1 cup Crispy Tofu Nuggets (recipe on this website)
1 cup thinly shredded purple cabbage
10-15 black olives
3-4 Tablespoons of Spicy Bitchin' Sauce
Instructions
Toast 3 Quinoa Wraps in a skillet to crisp up a bit. Put cabbage, olives and spicy sauce in a small bowl and mix together. Place the wraps on a plate and top each with the cabbage mixture then crispy tofu nuggets.
