This is a dinner for when you’ve worked a long day and come home to a hungry family. You want something nourishing and tasty, but you don’t want to spend hours cooking a gourmet meal. This red lentil soup is the easiest, most nourishing dinner you could make for yourself and your family.
Ingredients
2 tablespoons coconut oil
1 cup frozen peas
1 zucchini diced small
2 carrots, diced small
1/4 pumpkin, diced small
1 celery stick, diced small
1 red capsicum, diced small
1 leek, finely sliced
6 garlic cloves, finely chopped
2 sweet potatoes, diced large
200 grams button mushrooms, roughly chopped
1/4 cup fresh oregano, roughly chopped
1 red chili, chopped finely (optional)
3 bay leaves
1 1/2 cups raw red lentils
3 liters, water
1/2 cup roughly chopped parsley
salt and pepper
Instructions
Pour the oil into a large pot over medium heat.
Add all the vegetables except the lentils, water, and parsley.
Season well with salt and pepper.
Stir constantly for 3-5 minutes.
Mix in the red lentils and pour in the water.
Bring to the boil and cook for a minute.
Reduce the heat to a simmer and cook for 25-40 minutes.
Turn off the heat and allow to rest.
Garnish with the parsley and serve.
