These golden little cubes are made from day-old sourdough and baked until each piece becomes perfectly crisp, lightly chewy in the center, and full of savory flavor that instantly upgrades any salad or bowl of soup. They bring that cozy homemade touch that store-bought croutons never quite match.
Ingredients
2 cups Cubed Sourdough Bread (about 1/2-inch pieces)
2 Tablespoons Olive Oil or Melted Coconut Oil
1–2 Cloves Garlic, finely minced (or 1/2 tsp garlic powder for easier coating)
1/2 tsp Salt (or to taste)
1/4 tsp Black Pepper (optional)
1 tsp Italian Seasoning or Dried Parsley (optional)
(Optional) 2 Tablespoons Nutritional Yeast for a cheesy flavor boost
If you’ve never made your own croutons before, you are about to fall in love with this simple kitchen ritual. Taking leftover sourdough and turning it into something crunchy, flavorful, and totally snack-worthy feels like magic—especially when your home fills with that warm, garlicky aroma.
These croutons stay crisp for days and make even the simplest salad feel like something you’d order at a café. They’re also a great way to reduce waste and stretch your sourdough bakes even further.
Instructions
Cut your leftover sourdough loaf into small, even cubes (about 1/2-inch). Place the cubes into a mixing bowl.
In a small bowl, whisk together the olive oil, minced garlic (or garlic powder), salt, pepper, and herbs (if using). Pour this mixture over the bread cubes and toss well until every piece is coated, but NOT soaked in oil.
Place the coated bread cubes into your air fryer basket in a single layer (work in batches if needed). Air fry at 350°F (175°C) for 6–8 minutes, shaking the basket halfway through for even crisping. Keep an eye on them during the last few minutes—every air fryer is a little different!
Let the croutons cool completely—they’ll crisp up even more as they cool. Store in an airtight container at room temperature for up to one week.
Flavor Variations
Spicy: Add 1/4 tsp crushed red pepper flakes.
Lemon Herb: Add lemon zest and rosemary to the oil mix.
Cheesy: Sprinkle vegan parmesan cheese or nutritional yeast right after they come out of the air fryer while still warm.
