These spicy garlic pocket soup jars are one of those meals that make busy days feel so much easier. As the hot water sits in the jar, the noodles soften beautifully while the garlic, ginger, chili crisp, and peanut butter blend together into a rich savory broth packed with flavor. I love how comforting this soup feels without being heavy, and the chickpeas make it surprisingly filling for such an inexpensive meal. Ingredients
1 Bundle Rice Vermicelli Noodles
1/3 Cup Chickpeas
1 tsp Vegan Bouillon Paste
1 tsp Soy Sauce
1 tsp Chili Crisp
1 tsp Peanut Butter
1 Garlic Clove, grated
1 tsp Fresh Grated Ginger
2 Tablespoons Chopped Green Onions
Small Handful Spinach
Sesame Seeds for topping
2 to 2½ Cups Water for cooking
32 oz. Wide Mouth Mason Jar
There’s something so satisfying about watching all these simple ingredients transform into a rich flavorful broth in just a few minutes. The noodles soften, the peanut butter melts into the soup, and the chili crisp gives it that cozy spicy finish that makes you want another bowl immediately. I also love how inexpensive this recipe is because it feels like one of those meals you would grab from a little noodle shop, but you can make it right at home with pantry ingredients. This has quickly become one of my favorite quick lunches when I want something comforting but still packed with protein and flavor.
Instructions
Add the bouillon paste, soy sauce, chili crisp, peanut butter, garlic, and ginger to the bottom of a large jar or container.
Layer in the chickpeas, spinach, and green onions.
Add the rice vermicelli noodles on top.
When ready to cook, pour boiling hot water into the jar to almost full and place the lid on.
Allow to sit for about 2 minutes until the noodles soften. Carefully open as the jar will be hot. Stir until the broth becomes creamy and flavorful.
Top with sesame seeds and extra green onions before serving.
