Spicy Peanut Marinade

This rich and flavorful Spicy Peanut Marinade features creamy peanut butter combined with a punch of heat from chili paste or sriracha, balanced with the tang of fresh lime juice and a hint of sweetness. Soy sauce adds a savory depth, creating a perfectly bold and nutty profile that infuses tofu with a spicy, satisfying kick, making it ideal for stir-fries, noodle dishes, or grilling.




Ingredients

1/4 cup Peanut Butter

1/4 cup Soy Sauce or Tamari

1/4 cup Lime Juice

1 Tablespoon Maple Syrup or Agave Nectar

2 Cloves Garlic, minced

1 Tablespoon Fresh Ginger, minced

1-2 tsp Chili Paste or Sriracha (adjust to taste)

2-3 Tablespoons Water (to thin out the marinade)



Instructions

In a bowl, whisk together all ingredients until smooth, adding water to achieve desired consistency.


Coat the tofu with the marinade and let it sit for at least 30 minutes.




Spicy Peanut Tofu Stir-Fry

Ingredients

1 Block Tofu, pressed, cubed, and marinated in spicy peanut marinade

1 Tablespoon Vegetable Oil

1 Red Bell Pepper, sliced

1 cup Broccoli Florets

1 Large Carrot, thinly sliced

1/4 cup Chopped Peanuts, for garnish

Sliced Green Onions, for garnish

Cooked Rice or Noodles, for serving

Lime Wedges, for serving


Instructions

Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.


In the same skillet, add the red bell pepper, broccoli, and carrot. Stir-fry for 4-5 minutes, or until the vegetables are tender but still crisp.


Return the tofu to the skillet, and toss everything together. Let it cook for an additional 2-3 minutes to warm through and allow the flavors to meld.


Garnish with chopped peanuts and sliced green onions. Serve over cooked rice or noodles, and add a squeeze of lime for a burst of freshness.
