Sweet Potato Crumb Cake

I made this Sweet Potato Crumb Cake as another recipe for my amazing YouTube subscribers who love sweet potatoes just like me! It's an infusion of my moms crumb cake she use to bake for us as kids but with sweet potatoes added. Thank you friends for the inspiration. The cake is so moist and tender and the crumb topping is crunchy sweet and delicious. Together they make a perfectly delightful treat for breakfast or anytime of the day.


Cake Ingredients

1/3 cup Coconut Oil

1/2 cup granulated Sugar

2 Flax Eggs (1/4 cup Flaxseed Meal + 6 Tablespoons Water)

1 cup mashed Sweet Potatoes (roasted)

1 tsp Vanilla Extract

2 cups All Purpose Flour or Gluten Free Flour

2 tsp Baking Powder

1/2 tsp Baking Soda

1-1/2 tsp ground Cinnamon

1/2 tsp Salt

1/4 tsp ground Ginger

1/4 tsp Nutmeg

1/2 cup Unsweetened Plant Milk (I used Almond Milk)


Cake Instructions

Preheat the oven to 350 F degrees (175 C) and line a 8x8 round or square baking dish with parchment paper, set aside.

In a large bowl whisk together the all purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt.


In a medium bowl add the coconut oil and sugar, mix until well combined. Add to the bowl the flax eggs, mashed sweet potatoes, and vanilla, stir until smooth. Stir both the sweet potato and flour mixture together until well combined.


Pour the batter evenly into the prepared pan and set aside while you make your crumb topping. Evenly top the batter with the crumb.


Baked for 35-45 minutes or until a toothpick inserted in the center of the cake comes out clean.


Crumb Topping Ingredients

1/4 cup Light Brown Sugar (packed)

1/4 cup granulated Sugar

1/4 cup All Purpose Flour (can use gluten free)8

1/4 cup Rolled Oats (can use gluten free)

1/4 cup chopped Pecans, Walnuts or Almonds (I used Pecans)

1-1/4 tsp ground Cinnamon

1/4 cup Vegan Butter (cold, cut up)

Topping Instructions

Combine all the ingredients in a food process and pulse a few times until you get a crumb like consistency. Evenly pour on top of the crumb cake batter in the pan. If you don't have a food processor you can use a fork as well.
