How to Make Soft & Flexible Sweet Potato Tortillas
Ingredients
3/4 cup Sweet Potatoes (roasted, cooked and mashed)
1 cup All Purpose Flour (you can use gluten free flour)
I love how this recipe turns just two simple ingredients into something so soft, chewy, and versatile. These sweet potato tortillas are perfect for a lazy evening—fill them with savory beans or drizzle them with chocolate and berries! They remind me a bit of mini wraps or pancakes, and they always bring a smile. Plus, they’re gluten‑free and vegan, which makes them a perfect go‑to anytime.
Instructions
In a large bowl mix the flour and mashed sweet potatoes together until well combined.
On a floured surface add additional flour and kneed the sweet potato mixture until it forms a dough. The dough should not be sticky, it should be soft and pillowy.
Separate the dough into 5 equal parts. Dust the surface of the counter top with more flour, roll one of the dough pieces into a flat round tortilla shape about 1/2 inch thick. Don't make the dough too thin or it won't be soft and flexible.
On the stove top heat a pan on medium-high and cook the tortilla for 1 minute on each side until it puffs a bit and gets a few brown char marks on it. Place the cooked tortillas onto a plate and repeat this process with the remaining dough.
Note: This recipe can be made with Cassava Flour, Coconut Flour, Almond Flour or All Purpose Gluten Free Flour.
Note: you can enjoy these tortillas savory or sweet filling them with chocolate sauce, strawberries, bananas or fruit of choice. For savory option you can use any plant based meat, cheese, veggies, etc.
