Cozy Vegan Apple Bread – Soft, Sweet, and Perfect for Fall

Warm, tender, and filled with sweet cinnamon-spiced apples, this cozy vegan apple bread is the kind of bake that makes your whole kitchen smell like fall. Perfect with a cup of coffee or tea any time of day.
Ingredients
2 cups Flour
1 tsp Baking Soda
1 tsp Baking Powder
1-1/2 Teaspoons Cinnamon
1/2 tsp Nutmeg
1/2 tsp Salt
1 Large Apple, cut into small cubes, (about 3/4 cup)
1/2 cup Brown Sugar
1/4 cup Vegan Butter (or Oil)
1/2 cup Plant Milk
1 tsp Vanilla
There’s something magical about the smell of apple bread baking — it fills the kitchen with that cozy, nostalgic warmth that instantly makes you feel at home. This loaf is one of those simple recipes that tastes like a hug in every bite — soft, lightly sweet, and full of little apple chunks that caramelize beautifully as it bakes.
I love using a sweet, crisp apple like Fuji or Honeycrisp for the best flavor. Enjoy it warm with a pat of vegan butter or a drizzle of maple syrup, or toast a slice the next morning for a quick breakfast treat.
Instructions
Preheat oven to 350°F (175°C). Grease and flour a medium sized loaf pan.
Cut up the apple into small cubes and set aside.
In one bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg and salt.
In another bowl, brown sugar, butter (or oil), milk, and vanilla.
Combine wet and dry ingredients until just mixed. Fold in the apples. Do not over-mix or your bread will be tough.
Bake 45–50 minutes, until golden and a toothpick comes out clean.
Options: Top with chopped pecans, apple slices or finish after baking with a drizzle of caramel sauce.
