Vegan Bananas Foster

Vegan Bananas Foster is a rich, caramelized banana dessert infused with warm cinnamon, nutmeg, and a luscious dairy-free caramel sauce. The bananas are gently cooked in a velvety blend of coconut sugar, maple syrup, and coconut cream, creating a deep, buttery flavor without any dairy. A splash of dark rum (optional) adds a classic flambé effect, enhancing the sauce’s richness. Served over creamy vegan vanilla ice cream or drizzled atop pancakes and French toast, this indulgent yet simple treat is the perfect balance of warmth, sweetness, and spice. Garnish with crunchy pecans or walnuts for an irresistible finishing touch!




Ingredients

2 Large Ripe But Firm Bananas, sliced lengthwise

2 Tablespoons Vegan Butter

1/4 cup Coconut Sugar (or brown sugar)

1/2 tsp Ground Cinnamon

1/4 tsp Nutmeg

1/4 cup Coconut Cream (or Full-Fat Coconut Milk)

2 Tablespoons Maple Syrup

1 tsp Vanilla Extract

1-2 Tablespoons Dark Rum (optional)

Pinch of Sea Salt

Vegan Vanilla Ice Cream (for serving)

Chopped Pecans or Walnuts (optional, for garnish)



Instructions

In a pan over medium heat, melt the vegan butter. Add coconut sugar, cinnamon, nutmeg, and a pinch of salt. Stir until the sugar dissolves and becomes syrupy.


Gently place the banana slices in the pan, cut-side down. Let them cook for 1-2 minutes without stirring, so they caramelize.


Carefully add the coconut cream and maple syrup, stirring gently to create a thick, caramel-like sauce.


If using rum, remove the pan from heat, pour the rum over the bananas, and ignite with a long lighter. Let the flames die down naturally as the alcohol burns off.


Remove from heat and stir in the vanilla extract.


Spoon over vegan vanilla ice cream, pancakes, or French toast. Garnish with chopped pecans or walnuts for extra crunch.
