Crispy Vegan Focaccia for Under $2

This focaccia looks like something you’d find in an artisan bakery, but it’s made with just a few pantry staples and costs less than two dollars to make at home.

Focaccia is one of my favorite breads to bake when I want something impressive without the fuss. The dough is simple, the rise is forgiving, and those dimples filled with oil and herbs give it so much flavor. It’s crisp on the outside, soft in the middle, and the fact that it costs under $2 for the whole pan makes it one of the best budget breads you’ll ever try.
Ingredients
3 Cups All Purpose Flour
2 tsp Instant Yeast
1 tsp Salt
1 tsp Sugar
1-1/4 cups Warm Water
2 Tablespoons Oil
Toppings (onion slices, dried herbs, veggies, sliced olives, sea salt)

Instructions
Mix flour, yeast, salt, sugar, and warm water. Add oil, stir until dough forms.
Knead lightly, cover, and let rise 1–2 hours until doubled.
Oil a sheet pan, stretch dough into it.
Dimple dough with your fingers, drizzle with oil, sprinkle with herbs and/or your toppings.
Bake at 425°F (220°C) for 20–25 minutes until golden and crisp.
Cost: 1 pan, ~$1.59 total
Note: If you allow your dough to rise for only the 1 hour mark, after placing it in the pan you can cover it and allow to rise for an additional 20 minutes. This will push more air pockets into the dough. But I have found that if I allow it to rise for the full 2 hours that step is not necessary. This dough is very forgiving so have fun with it!
