Vegan French Toast with Fresh Fruit & Coffee (Budget-Friendly)

Vegan French toast is a delightful plant-based alternative to the classic breakfast dish, crafted without eggs for a cruelty-free twist. This easy-to-make recipe achieves a deliciously golden and fluffy texture.
Ingredients
1 cup Plant Based Milk ( I used unsweetened Almond Milk)
2 Tablespoons Cornstarch
1 Tablespoon Agave Nectar
1 tsp Vanilla Extract
1 tsp ground Flaxseed Meal
1/2 tsp ground Cinnamon
1/4 tsp Salt
6-8 Slices of Sour Dough Bread or a good sturdy bread
Butter for frying
French toast has always felt like such a treat to me, but the best part about this recipe is that it’s just as easy as it is indulgent. By whisking together a simple batter of plant milk, flour, vanilla, and cinnamon, you get all the richness of classic French toast without any eggs or dairy. I love using sourdough for this recipe because it soaks up the batter perfectly and gets those golden, crisp edges when it hits the pan.
Topped with fresh fruit and served with a hot cup of coffee, it’s the kind of breakfast that feels special but is still budget-friendly. And here’s my little money-saving tip: I always save leftover brewed coffee in a jar in the fridge—it’s perfect for making desserts like tiramisu or for adding a rich flavor to smoothies and cakes.
Instructions
In a large bowl add the plant based milk, cornstarch, vanilla extract, cinnamon, flaxseed meal, agave nectar and salt and mix until well combined. Allow the batter to sit for 5 minutes until it thickens up a bit.
Melt about a tablespoon of butter in a large skillet on medium/high stovetop. Quickly dip a slice of bread into the batter on both sides and place it into the hot skillet, repeat with another slice of bread. Cook on each side for about 2-3 minutes or until golden brown. Remove and repeat with the remaining slices of bread.
Serve with maple syrup and butter. Enjoy.
Note: for this recipe you will need to use a sturdy bread like sour dough. When you dip the bread into the batter do it quickly on each side and DO NOT soak the bread as it may fall apart. A non-stick pan also works great for this recipe.
You can also bake the french toast on a lined baking sheet if you are making larger amounts.
