Bright, tangy, and bursting with fresh lemon flavor, this vegan lemon mug cake is a little ray of sunshine in dessert form! Made in just minutes, it’s soft, fluffy, and perfectly sweet with a refreshing citrus twist. It’s the ultimate quick treat when you’re craving something light, vibrant, and homemade without turning on the oven.
Ingredients
4 Tablespoons All-Purpose Flour
2 Tablespoons Organic Cane Sugar
1/4 tsp Baking Powder
Pinch of Salt
3 Tablespoons Oat Milk (or any plant-based milk)
1 Tablespoon Neutral Oil
1 Tablespoon Fresh Lemon Juice
1/2 tsp Lemon Zest
1/4 tsp Lemon Extract (optional for maximum flavor)
Drop of Yellow Food Grade Coloring (optional)
Optional: Powdered Sugar for dusting
This lemon mug cake is one of my favorite quick desserts because it tastes like spring in a mug. It’s soft, moist, and perfectly sweet with the natural zing of fresh lemon juice and zest. I love making this when I want something homemade but don’t want to spend time baking an entire cake.
Instructions
In a small mug, whisk together the flour, sugar, baking powder, and salt.
Add oat milk, oil, lemon juice, and zest. Stir until just combined — don’t overmix.
Microwave for 60–70 seconds, until the cake is set but still moist.
Cool slightly, dust with powdered sugar if desired, and enjoy warm!
