These chewy oatmeal raisin cookies are golden brown on the outside and soft in the middle, filled with sweet raisins and warm cinnamon spice. They’re a classic homemade treat that feels cozy and nostalgic, yet they come together quickly with simple ingredients from your pantry.
Ingredients
1 cup Rolled Oats
1 cup All-Purpose Flour
1/2 cup Brown Sugar
2 Tablespoons White Sugar
1 tsp Baking Powder
1/2 tsp Ground Cinnamon
Pinch of Salt
1/3 cup Oil or Vegan Butter, melted
1/4 cup Plant Milk
1 tsp Vanilla Extract
1/2 cup Raisins or Dried Cranberries
When I think of comfort food desserts, oatmeal raisin cookies are always at the top of my list. There’s something so timeless about the combination of chewy oats, plump raisins, and a touch of cinnamon. They remind me of the cookies I grew up with — warm, soft, and perfect with a cup of tea or coffee.
The best part about this recipe is how budget-friendly it is. You can bake an entire batch of about 18 cookies for under two dollars, which means each one costs only pennies. Whether you enjoy them as an afternoon snack, pack them in lunches, or serve them as a simple dessert, these cookies are proof that homemade doesn’t have to be expensive to taste amazing.
Instruction
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, combine oats, flour, baking powder, cinnamon, and salt.
In another bowl, whisk together brown sugar, white sugar, oil (or vegan butter), plant milk, and vanilla until smooth.
Stir wet ingredients into dry ingredients until just combined.
Fold in raisins (or dried cranberries)
Scoop spoonfuls of dough onto baking sheet, spacing them apart.
Bake 11–13 minutes, until edges are lightly golden.
Let cool 5 minutes on the sheet before transferring to a rack.
Tips & Variations
These bake up softer than soda-based cookies — if you like them extra chewy, take them out right at 11 minutes.
Add a sprinkle of extra cinnamon or a dash of nutmeg for cozy fall flavor.
For crunch, mix in a handful of chopped walnuts or sunflower seeds.
