Ingredients
2 cups Rice, cooked in bulk
1 Block (14 oz) Firm Tofu, cubed
2 cups Broccoli Florets (or veggies of choice)
1 Bell Pepper, sliced
1 Onion, sliced
2 Tablespoons Soy Sauce
2 Cloves Garlic, minced
Cornstarch on Tofu
2-3 Tablespoons of Oil

I love using whatever veggies I have on hand—bell peppers, broccoli, or carrots—and tossing them in a simple soy-garlic sauce that brings everything to life. Instructions
Cook rice ahead of time for meal prep.
Toss your cubed tofu in a few tablespoons of cornstarch.
Heat the oil in a pan or wok, then sear tofu cubes until golden on all sides. Remove from pan and set aside.
Add onion, broccoli, and bell pepper to the pan (add more oil if needed). Stir fry until veggies are crisp-tender, for about 2-3 minutes. Add the tofu back into the pan.
Stir in soy sauce and garlic. Add a splash of water or veggie broth, if needed. Cook for another 1–2 minutes. Serve over rice.
