This juicy summer salad brings together sweet watermelon, ripe cherry tomatoes, and aromatic basil for a burst of fresh, vibrant flavor in every bite. The combination is both hydrating and rich in antioxidants like lycopene, vitamin C, and polyphenols that support heart health and fight inflammation. A drizzle of balsamic glaze adds the perfect tangy-sweet contrast to the natural fruitiness. Optional vegan feta adds a creamy, salty note that balances out the sweetness beautifully. Ingredients
3 cups Watermelon, cubed or balled
1 cup Cherry Tomatoes, halved
1/2 Small Red Onion, thinly sliced
1/4 cup Fresh Basil, torn or chopped
Optional: 1/4 cup Vegan Feta or Crumbled Tofu with Lemon & Salt
Simple Balsamic Dressing
1 Tablespoon Balsamic Vinegar or Balsamic Glaze
1 tsp Olive Oil
Salt and Pepper to taste
Instructions
In a large bowl, combine watermelon, tomatoes, red onion, and basil.
Drizzle with balsamic and olive oil, season to taste.
Top with vegan feta if using and serve cold.
If you are out of Balsamic Vinegar here's a substitute:
Balsamic Vinegar Substitute (Makes ~2 TB)
Ingredients
1 Tablespoon Apple Cider Vinegar (or red wine vinegar)
1 tsp Soy Sauce or Tamari (adds umami depth)
1-1/2 tsp Maple Syrup or Molasses (for sweetness and color)
Optional: Pinch of Garlic Powder or a tiny bit of Mustard for body
Instructions
Whisk everything together until smooth. Let it sit for 5 minutes before using so the flavors meld a bit. Use it in any recipe that calls for balsamic vinegar or glaze!
